What rhymes with hug me...

Seriously this is my jam. Thanks to this lovely lady for helping me get my groove on at 9am.

I have so much to say and share that I have been avoiding the whole blogging thing.

I have...
...kicked Anytime Fitness to the curb and joined the Planet Fitness craze. I love the energy and the fact I never have to stress about finding an open machine. The extra $26 bucks in my pocket each month also helps expand my love. The staff could be better.
...become addicted to the arc trainer and seriously burn 200 more calories in the same time period I would spend on the elliptical.
...been loving my new roommates and have fell in love with Latin cuisine.
...not been able to get over my 10 minute commute to work.
...been told I look 24ish(like all the time) Thankfully since I turn 27 this year and since about 18 people always said I look older.
...officially lost 50 LBS! YUP! HASHTAG Rockstar.
...been enjoying rum and diets.
...become obsessed with the wine at Trader Joes, now that I go by the one that actually has beer and wine.
...become the girl who wears patterned pants and I am obsessed.
...planned a dinner for a roommates birthday including some awesome Pulled Pork by the goddess that is The Pioneer Woman.
...enjoyed having fun roommates who actually LOVE my crazy flavor filled, produce packed food.

I promise to be back next week with a picture filled post to bring you all up to date.

Until then...back that azz up.

Tofu Vegetable Stir Fry

Growing up we always had a garden and produce during the summer. Other times in the year my fruit and veggie intake was lacking. I always had a premise that produce was not the best unless it was summer. I always was aware of taking up space in the fridge with roommates and we all know how much space produce can take up. Thankfully in this house, we all love our fruits and veggies! Now that I am off on my own and can completely dictate what I eat, I have learned where I can get good produce year round. Trader Joe's has yet to fail me. I have been wanting to cook stir frys, but was intimidated. Where do I start? Okay, any veggies I have laying around, but what could those include? What do I use for a sauce? Do I have to use a wok?

I have since added a few more ingredients to my stir fry but this is how I started!

1 Tbsp minced garlic
2 Tbsp minced ginger
1 package Trader Joe's Organic Baked Tofu
1 Trader Joe's Asian Vegetable Stir Fry
1 handful of spinach
1 bell pepper
1/4 cup Trader Joe's Soyaki
Drizzle of saraichi sauce

Mince the garlic and ginger. Add to the wok on medium high heat with a drizzle of EVOO. Once fragrant leave for another minute then remove to a bowl. Cube the tofu and add to the wok. Remove to bowl after they have browned. Add the vegetable stir fry, handful or two of baby spinach, chopped bell pepper, soyaki, and drizzle of saraichi sauce to the wok on high heat. Once the vegetables soften add the tofu, garlic, and ginger. Combine ingredients. Enjoy!

I have even crumbled an ounce of French Feta on top!

Boston I love you

Today was suppose to be a post of the shenanigans I partook in yesterday in Boston with my roommate S, her brother W, and his girlfriend J. I snapped the photo above about an hour before the explosions at the finish line of the Boston Marathon.

Yesterday was Patriots Day in Massachusetts, it usually falls the Monday of spring break for schools, marks the beginning of The American Revolution, and is also called Marathon Monday. Let me paint a picture of what this day is like. People come from all over to cheer on the runners, families bring their children, college students and 20 somethings like myself converge to Boston to drink to the runners, and it is hard to find someone who does not know a person running the marathon. It is Boston at it's finest. The weather is perfect. The sun is shining. The Red Soxs had a game and the Bruins were scheduled to play until the explosions rocked the city.

I was eating at Uno's, a few blocks from the site, when the explosions went off. They immediately disabled cell service in the area. We immediately headed back to Boston University where J is going to school and watched the press conferences on tv. The only way to describe the city after what happened was somber. It was quiet. The energy, inspiration, and love had ceased.

I am angry.

I am sad.

I am confused.

The one thing I do know is that Boston will come back from this, even stronger and with even more pride.

Boston I love you.

Pretty little things

Dear new view: I foresee some gorgeous sunsets in the future. Dear 13 minute commute: Ah this is more like it. I am seriously super close to everything now. Dear Leia: Thanks for being such a good little dog, I can take you anywhere. Dear new bed frame: And I need another support board under there, my shoulders and back having been killing me all week. Dear Spring: Please show yourself? It has been quite chilly around these parts. Dear Gym: Hopefully my stomach will calm down and I can get back to the 4 times a week routine, moving is hard. Can't believe you are less than 5 minutes away!
